Soup or salad.....

Or both!  For dinner Tuesday night, I made a lovely Caesar salad with grilled seitan.  It was so good. 
For dinner last night, we had a curried red lentil, couscous, vegetable soup.  It was so easy to  make and super tasty. I served it with some homemade breadsticks.  I opted not to make the soup spicy so the boys could try some. 

Curried Red Lentil/Couscous Veggie Soup
4c vegetable broth
1 can coconut milk
1/2c couscous
1c red lentils
2c fresh greens, chopped
1 small onion, chopped
2 large cloves garlic, minced
1 large carrot, sliced
2c potatoes, cubed

1/3c button mushrooms, chopped
1/4c cilantro, chopped
1t salt
1T curry powder
1/2t garam masala
1/2t turmeric
1/2t fenugreek seeds
1/4t mustard seeds
1t cumin

Place the ingredients into a pot.  Bring to a boil, then immediately turn down to a simmer.  Cover, and simmer until the potatoes are soft.  Ladle into bowls, and garnish with fresh cilantro. 

Homemde breadsticks which the boys absolutely loved.  They devoured them.  The 6 year old said I should make them everyday.

  2. Yum! I make a similar soup that my husband loves. Those bread sticks looks divine! I haven't attempted to make my own yet, but you've inspired me :)
